The use of Goya Sazon in this rice dish places it squarely in the Latino cooking tradition that entered the April family through marriages and relationships over the years. Tim Board's version is a simple, weeknight-friendly side that pairs with enchiladas, quesadillas, or grilled chicken — the Rotel tomatoes and Sazon seasoning doing all the flavor work.

  1. Melt butter in pan. Add yellow rice and seasoning packet. Brown the rice.
  2. Add 2 cups water, Rotel tomatoes, and a packet of Sazon.
  3. Simmer for 40 minutes or until rice is tender. Add water if needed during cooking.
