Whole roasted chicken — whether in an oven or, in this case, a slow cooker — is among the most universal expressions of home cooking across cultures. In NE Ohio farm families, a chicken in the pot on Sunday was as natural as church in the morning. Patty Hykes's slow cooker version simply removes the need to watch it.
Ingredients
3–4 lb whole chicken
½ onion, chopped
1 rib celery
Salt and pepper
½ tsp poultry seasoning
Instructions
Sprinkle chicken cavity with salt, pepper, and poultry seasoning.
Put onion and celery inside the cavity.
Put chicken in slow cooker.
Cover and cook on low for 8–10 hours or high 4–6 hours.
