Pork Chops and Gravy

Pork with gravy is one of the oldest expressions of German and German-American home cooking — a combination that appears on tables from Alsace to Ohio with remarkable consistency. For a family whose great-grandparents came from Soultz-sous-Forêts, a dish of slow-cooked pork chops in rich cream gravy would have felt less like a recipe and more like a memory.

Instructions

  1. Season chops with salt and pepper. Brown in oil, drain and transfer to slow cooker.
  2. In bowl whisk together mushroom soup, onion, and milk until smooth. Pour over chops.
  3. Cover and cook on high 3–4 hours or low 6–8 hours.
  4. To increase flavor, add ½ c sour cream during last 30 minutes.
