Salisbury steak — ground beef patties in brown gravy — was named for a 19th century American doctor who prescribed lean beef as a health food, but it became famous as a Depression-era budget meal and later as a TV dinner staple. Terri Board's version, served over mashed potatoes or rice, is the home cook's dignified reclamation of a dish that deserved better than the frozen food aisle.
Ingredients
1 lb. hamburger
Salt and pepper
Sliced mushrooms (if desired)
1 large onion
1 can cream of mushroom or chicken soup
1 can water
Instructions
Make 4 patties with meat, salt and pepper to taste. Put in oven-safe dish.
Mix soup and water and pour on top. Add sliced onion and mushrooms.
