Marvelous Meatloaf

Meatloaf is one of the most American of dishes — a Depression-era innovation that stretched ground beef with breadcrumbs and binders to feed more people from less meat. It became so embedded in the Midwestern family dinner tradition that it outlasted the necessity that created it, continuing as a comfort food for generations who never knew scarcity. Diane April's microwave version reflects the time-saving adaptations of the 1980s.

Instructions

  1. Combine all ingredients in a 12×8 dish.
  2. Shape into 8×4 loaf.
  3. Cover with wax paper and cook in microwave on medium for 20–24 minutes.
  4. Let stand 5 minutes.
