A creamy cold macaroni and cheese salad with green pepper, celery, and onion in salad dressing. Terri Board’s easy potluck dish — make the mac and cheese, let it cool, fold in the vegetables and dressing, and chill.
Ingredients
1 box macaroni and cheese
1 cup Miracle Whip or mayonnaise-style salad dressing
½ green pepper, chopped
1 stalk celery, chopped
1 small onion, chopped
Salt and pepper to taste
Instructions
Prepare macaroni and cheese according to package directions.
Allow macaroni and cheese to cool completely before mixing with other ingredients.
Add the salad dressing, green pepper, celery, and onion. Mix well.
Season with salt and pepper to taste.
Cover and chill for several hours before serving.
Add more salad dressing if needed before serving.
Let it cool first: Make sure the mac and cheese is fully cooled before adding the dressing and vegetables — adding them while warm makes the dressing oily and the veggies limp.
Make it ahead: Even better the next day after the flavors have had time to meld.
