A hearty, crowd-pleasing casserole that works equally well as a holiday breakfast side or a weeknight dinner. Frozen hash browns bake in a rich mixture of sour cream, cream of chicken soup, cheddar cheese, butter, and diced ham — with onion softened in the microwave first to mellow its bite. Terri Board’s version adds diced ham to make it a full meal, and the optional crushed potato chip topping adds a satisfying crunch. Everything goes into one dish and bakes for an hour with almost no effort.
Ingredients
1 bag (30 oz.) frozen hash browns
8 oz shredded cheddar cheese
½ c butter, melted
16 oz sour cream
1 can cream of chicken soup
½ onion, diced
½ lb ham, diced
Salt and pepper to taste
Crushed potato chips, for topping (optional)
Instructions
Preheat oven to 350°F. Grease a 9x13 baking dish.
Place the diced onion in a microwave-safe bowl and microwave for 1 to 1½ minutes until softened.
In a large bowl, mix together the hash browns, cheddar cheese, melted butter, sour cream, cream of chicken soup, softened onion, and diced ham.
Season with salt and pepper to taste.
Transfer the mixture to the prepared baking dish and spread evenly.
Top with crushed potato chips if desired.
Bake uncovered at 350°F for 1 hour, until bubbly and golden on top.
Let rest for 5 minutes before serving.
Optional topping: Crushed potato chips sprinkled on top before baking add a delicious salty crunch. Regular or sour cream & onion flavor both work well.
