Ingredients
1 lb ground beef
1 large onion
8 oz Mexican/Cheddar cheese
8 oz sour cream
1 packet Goya Sazon (beige top)
1–2 cans enchilada sauce
Flour tortillas
Instructions
Brown ground beef, sprinkle with packet of Sazon. Chop onion.
Allow beef to slightly cool.
Combine beef, onion, cheese, and sour cream in bowl.
Place 1–2 tablespoons of mixture into each tortilla and roll.
Place in baking dish and cover with enchilada sauce.
Sprinkle additional shredded Mexican/Cheddar cheese over the top.
Bake at 350° for 20 minutes, until the cheese on top is melted and bubbly. Makes approximately 8 enchiladas.
