A classic broccoli casserole from April Kelly — chopped broccoli with Minute Rice, cream of mushroom soup, and Cheez Whiz baked until bubbly. Simple comfort food that comes together fast, oven or microwave.
Ingredients
1 pkg frozen chopped broccoli
1 stick butter
1½ c Minute Rice
1 can cream of mushroom soup (or cream of celery)
1 small jar Cheez Whiz
½ c water
Instructions
Cook broccoli in ½ c water for 5 minutes. Do not drain.
In a separate pan, cook butter and Minute Rice together for 10 minutes. Remove from heat and let sit.
Combine the rice mixture with the broccoli, cream of mushroom soup, and Cheez Whiz. Mix well.
Transfer to a greased baking dish.
Oven: Bake at 350°F for 30–35 minutes, uncovered.
Microwave: Cook on high for 16 minutes, uncovered.
About the name: This is April Kelly’s recipe — the “April’s” is possessive, named for her personally, not just the family name.
Soup swap: Cream of celery works just as well as cream of mushroom — use whichever you have on hand.
